Winemaking:

The 2017 harvest produced an abundance of high-quality estate Chardonnay. A long cool growing season allowed for good fruit flavour maturity while still maintaining high acidity and moderate sugars, perfect conditions for traditional method sparkling wine. Fermentation & elevage took place in our cellars for 8 months prior to the addition of tirage to the unfiltered base wine.

The wine then rested en tirage for 42 months- subsequently, the wine was disgorged and finished brut zero (no sugar added to dosage). This edition of Ceremony is a move to vintage dated Blanc de Blancs to compliment the current vintage dated bottlings of Stardust and Loveless.

Tasting Notes:

Elegant pear and apple nose with a note of toasted almonds. A delicate yet refreshing palate showcasing notes of grapefruit and minerality, balanced by a creamy, staying finish. A classic pairing with oysters on the half shell. Also a lovely pairing with lighter seafood dishes such as calamari, tempura, or shrimp tacos.

There is some lees lounging in 500L puncheon which, coupled with the further 42 months post tirage adds up to complexities on charts and those not able to be found on charts. Really toasty bubble, invigorating and yet also of a calming or at least nurturing stance. Like biting into a fizzy apple and having it tingle in your mouth, followed by a jettison of herbal, citric and wild forest edible flavours. Even a fruity chanterelle.
