Chardonnay for Ceremony is 100% sourced from our North and South block estate plantings.

Food Pairing Suggestions
A versatile match for many foods such as savoury hors d’oeuvres, fresh herb chicken or seafood pasta with light cream sauce. Classic pairing with sushi or deep fried calamari and of course, oysters.
“…Frothy and creamy, it’s bone-dry and medium-bodied, with a blast of ripe-pear-and-apple fruit against a subtle backdrop of yeasty bread dough, framed by lively acidity.”

“Bracing citrus aromas meld with leesy notes and flecks of minerality on the nose of this methode traditionelle, estate-grown, 100% Chardonnay sparkling wine. Tangy lemon citrus dominates the initial sip with crisp green apple and hints of lime joining the party on the palate and infusing the mouth-watering finish.” ٭٭٭٭ ½ Vic Harradine, winecurrent.com
“This dry sparkler from one of Prince Edward County's oldest wineries is made entirely from estate-grown Chardonnay. Rosehall Run takes an extra step backwards, riddling every bottle by hand, as is traditional with champagne. Clean and classy, with glittery acidity.” NNNN Sarah Parniak, NOW Toronto
“Really very good. Richer styled bubbly that doesn't resort to sugar to give it some texture. This has impeccable balance, fine acids, a buttery richness, and a nuanced rocky minerality that runs from first sip to the end of the bottle. Comfortable, interesting and elegant. What more could you ask from a bubbly?” Bill Zacharkiw, WineAlign.com
“This 100% estate Chardonnay has a lovely biscuit note on the nose to go with lemon chiffon, fresh citrus, brioche and toasted vanilla. The tiny, vigorous bubbles are persistent in the glass and the sparkler shows bright acidity that gives a lift to the fresh lemon-citrus and green apple flavours.” Score 91 Rick Vansickle, Quench Magazine
“A multiple vintage cuvée from estate grown fruit of weight, substance, tang, drive, a shot put of citrus, servitude to PEC Chardonnay, certitude to B de B style and structure. Just enough pierce to go through and come out clean, even in the face of oxidative time, on the other side. Dips into the well of Champagne to recover its fearless tactility.” Score 91 Michael Godel, WineAlign.com
“Ceremony is a traditional method sparkling wine from multiple vintages made entirely of Prince Edward County grown chardonnay. Notes of fennel, rosebud and pear on the nose with a crisp, mouth watering palate. Mineral and crunchy saline along with white grapefruit and lemongrass refresh and linger on the finish. Ageing in large, 500 litre barrels adds a slight toastiness that enhances the yeasty, autolytic element in the wine. Elegant and memorable.” Score 90 Sara d’Amato, WineAlign.com
“This is a well-balanced, rich and flavourful sparkling chardonnay, made from fully ripe grapes with high flavour intensity, yet vibrant acids and fine tension and energy. Length and depth are superb, and dosage is well measured. A great addition to the growing line-up of quality County bubbles.”
Score 90 John Szabo, WineAlign.com
“Made entirely from chardonnay and by the ‘traditional method’, this has a minimal dosage. It’s a really lovely sparkling wine, bone dry, showing nicely defined and nuanced fruit, with vibrant, zesty acidity. The bubbles are a treat to observe (in my case in a retro coup): steady beads of fine bubbles that collect in a small roiling sort of crema in the centre of the wine’s surface. With examples like this, sparkling wine has a bright future in Ontario.” ٭٭٭٭٭ Rod Phillips Winepointer.ca
“This is the first traditional method bubbly made by Rosehall Run – it’s 100% Chardonnay with grapes coming from their own vineyard and seeing some barrel aging of the base wine; that’s what really gives this sparkler its depth of character. Aromas of mineral, hazelnut and smoky-toasty notes… the upfront hit of acidity really brings this one together, no matter how creamy or toasty the wine gets that acidity brings everything back into balance.” ٭٭٭٭ ½ Michael Pinkus, michaelpinkuswinereview.com
“This is the first traditional method sparkling from Rosehall Run. What a way to make an entrance! Blanc de Blanc means this wine is made completely of Chardonnay. The nose offers up bright lemon notes and rising bread with hints of vanilla. The flavours are apple layered over lemon and hints of vanilla poking through. The finish is bright, crisp and clean. The label says Ceremony and this would make a welcome addition to any celebration.” ٭٭٭٭ ½ André Proulx, andrewinereview.ca
