Tasting Notes

Zesty lime and aromatic herbs on the nose; on the palate it is dry and flavourful with fresh mouth-watering lemon, lime, zippy grapefruit and notes of herbs lingering on the finish.

 Food Pairing Suggestions

This wine pairs well with vegetable risotto, a must-have with raw or lightly cooked seafood dishes or fish such as seared halibut with asparagus. Goes nicely with simply prepared white meat like baked or roasted chicken, and a good wine to pair with goat cheese.

 Critical Acclaim

“This has aromas of lemon, zesty lime, some tropical fruit notes and a touch of spice. It’s zesty and fresh on the palate with lime, grapefruit, lovely texture and spice with plenty of acidity to keep it lively through the finish.”  Rick Vansickle, Quench

“Sourced from estate vines this nicely fresh, lighter and not too herbaceous sauvignon. The nose is mild with lemon, vague mint/grassiness and yellow plum notes. It is light to medium body with fine acidity and a touch of rounding sweetness. The length is good to very good.” David Lawrason, WineAlign.com

“From estate raised County fruit the salty, limestone marine-ness of Dan Sullivan's sauvignon makes for a verdant and mouth-watering wine. The aromatics make you think of some tropical fruit and potential fleshiness but it streamlines direct, mineral and savoury herbal with a real push of lemon and lime.” Score 89 Michael Godel, WineAlign.com
