The Vineyards

Sourced from estate vines (yielding 1.9 tonnes/acre, a paltry 28 hL/ha) and select lots of high quality fruit from local vineyards.

Winemaking

A five day cold soak preceeded a 20-26 day warm fermentation.  Half the wine was fermented using delestage and pumpover; the other half was punched down by hand in small 800 kg lots. All of our barrique aged Pinot Noir was barrelled down into French Oak. During elevage twenty three barrels were selected for inclusion into this cuvee, where it matured for about eight months. The balance of the cuvee rested on fine lees in stainless steel for the duration.
