Salmon Fillets With 2007 Chardonnay

At the risk of sounding cliché, I thought I had died and gone to wine lovers heaven. Man, this is an outstanding wine, swirling with ripe Bartlett pear and green apple aromas and flavours. The palate is full-bodied and very juicy with excellent structure and a wonderfully oily mouth feel. I paired this jewel with salmon purchased at Costco. I love Costco's salmon. I cut two large Fillets from the fish and put the rest in the freezer.

I coated the fillets in olive oil and then dredged them in panko breadcrumbs spiced up with just a touch of Cajun seasoning. Panko breadcrumbs are available in Asian supermarkets. Using an iron skillet, I seared the salmon until golden so that the coating remained crispy. I popped the fillets into the oven and left them to bake for 350F, just long enough to bake them throughout. Rose Hall Run's 2007 chardonnay is one of the best wine parings I've ever experienced for baked salmon. Try it.
